Mom’s Strawberry Rhubarb Crisp
Oh my gosh, it smells like my childhood in my kitchen right now! I LUV IT!
What you’ll need:
- 1 full cup quartered strawberries
- 1 full cup diced rhubarb (peal off the first layer so it’s not too stringy)
- 3/4 cup of sugar (you can get away using a tad less)
- 1 Tbs flour
- 1 cup oatmeal
- 3/4 cup brown sugar
- 1/2 cup butter (make sure the butter is nice and cold - you will want to cut it into pieces before adding it to the mixture!)
- 1/2 cup flour
DIRECTIONS: Get your kids to help! They love this part! Mix the strawberries, rhubarb, sugar and flour in a medium bowl. In a separate bowl, mix the oatmeal, brown sugar, butter, and additional flour together.
This recipe is enough for two standard ramekins. I like to butter the bottom and sides of the ramekins. but if you forget, it’s not a huge deal. Fill the ramekins with the fruit mixture (almost to the top) and then add a ton of the crumble mixture! Don’t worry, it will bake down. Cover a cookie tray in tin foil, set the ramekins on top, and bake at 350 degrees for 30-40 minutes. They should be bubbly and steamy and golden brown! Serve warm and top with vanilla ice cream!
