Poppin' Jalapeno Poppers

Crispy bacon and spicy peppers give these poppers serious kick!


YUM. YUM. YUM.  First of all, I absolutely LOVE using wonton wrappers.  It just makes me feel...COOL.  Honestly, I may create a million more recipes for wonton wrappers since I am starting to believe...EVERYTHING TASTES BETTER IN A WONTON.  

OK.  Let's get to it!  I am pretty positive you will love this recipe as much as I do!  Perfect for parties -- or just for dinner at home.  Minus the Jalapenos, I think the kiddos would eat 'em up too!  

The cheesy filling is quick and easy to whip up!

Here's what you need...

  • Wonton Wrappers
  • 2 ounces cream cheese (1/3 reduced fat)
  • 2 ounces goat cheese
  • 1/2 cup shredded cheese (I use a pre-shredded Mexican blend)
  • 1/2 cup low fat sour cream
  • Diced cherry tomatoes (I use 3 or 4 cherry tomatoes)
  • 1 Jalapeno pepper (I like it really spicy -- but use as much or as little jalapeno pepper as you wish.)
  • Bacon bits (I ALWAYS bake my bacon at 400 degrees for 20 - 25 mins for extra crispy bacon!  No flipping required!!)
  • Salt and pepper
  • Avocado

Here's how you make it...

  • Preheat oven to 350 degrees.  Lightly spray muffin tin with cooking spray.  Gently push wonton wrappers down into muffin tin.  (You will notice one side of the wonton wrapper is lightly dusted with flour.  The flour side should be on the inside of the popper.)  
  • Pre-bake the wonton wrappers (unfilled) for 8 mins -- until golden brown.  Make sure the wrappers are cooked for at least 8 minutes -- you don't want your popper to be too tough and chewy. 
  • Remove wonton cups from oven and set aside.
  • Mix all other ingredients and spoon into a slightly cooled wonton.
  • Add a bit more shredded cheese and crumbled bacon to top and bake the fully-loaded popper for 10 - 12 minutes.
  • I like to add fresh avocado to the top and serve steamy hot! Hope you are hungry!!!

Feel free to pre-bake the wontons a few hours ahead of time -- When your guests arrive, load up the wontons and pop them into the oven!

BONUS TIP!!

STOP FRYING your bacon already!!!  BAKE IT, BABY!

Here's how you make it...

  • Line your baking tray with tin foil.  Place your bacon onto the sheet.  
  • The strips should lay flat and not overlap each other.  
  • Bake the bacon at 400 degrees for 20 minutes (plus or minus depending upon how you like your bacon cooked!)  For extra crispy bacon, I keep it in there for 25 minutes -- but be sure to keep a close eye on it toward the end!)  There is ZERO flipping of the bacon.  No crazy splatters.  Just awesome BACON, minus the mess.
